Healthy Turkey Chili

Fall weather 🍂🍁 calls for homemade Chili👇 I use ground turkey and lots of vegetables...🥕🌽🍅 and I skip the beans but they can be added.
Recipe for Instant Pot🥑
1 lb ground turkey 1/2 cup chopped onion 4 cups of chopped vegetables (I use a mix of bell peppers, frozen okra, carrots, celery but you can use whatever you like)🥕 1/4 cup corn🌽 1/4 tsp minced garlic 1 can stewed Italian tomatoes 🍅 1 can tomatoes with green chilies (10oz) 1 1/2 tbsp chili seasoning 🌶 1/2 tsp onion powder 1 tsp paprika 2 tsp cumin dash of cayenne Salt & pepper to taste
My IP needs at least 1 cup of liquid. I drain the cans, save the juice and make sure it’s at least a cup. If I have to, I will add some water to the tomato juice to get a cup. 🥣
Add 2 tbsp olive oil and sauté chopped onion and garlic for about 2-3 minutes in IP on low. Add ground turkey, brown for about 3 minutes. Add the vegetables (except the corn) and continue cooking for another 3 minutes.🧂
Turn off Instant pot, add liquid, both cans, seasoning, and corn. Combine and turn on chili setting for 18 minutes. 🥄
Add jalapeños, cilantro, and a couple of avocado slices.🥑🥑🥑
