Whole Grain Banana Blender Pancakes
2 1/4 cups rolled oats
1 cup unsweetened almond or cashew milk
3 ripe bananas
1 tbsp pure maple syrup (or honey)
1 large egg
1/4 tsp sea salt
1 tsp pure vanilla extract
1 1/2 tsp baking powder
Optional: 1/2 cup of fresh blueberries
Place all ingredients, except blueberries in blender or food processor. Blend on high until completely mixed together and oats have broken down. About 1-2 minutes. Fold in blueberries or add a few to pancake before flipping.
Heat griddle or pan over medium heat and melt a teaspoon or two of butter, coconut oil, or plant based butter. Pour or scoop 1/4 cup of the batter onto pan. Cook 2-3 minutes on both sides. Add fresh fruit, pure maple, honey or powdered sugar. Enjoy!
