Zoodles with Lentil Tomato Sauce

🌿Zoodles with Lentil Tomato Sauce...made this for the first time today. Lentils are a great protein source, packed with B vitamins, magnesium, zinc, fiber, and potassium. They are also inexpensive. I usually buy them in a can.

Ingredients: 1/2 can of lentils (drained and rinsed) 3/4 cup chopped celery 1 cup chopped carrots 1/2 tsp minced garlic 1/3 cup chopped white onion 1/2 tsp paprika 1 1/2 tsp garlic herb seasoning (salt free) 2/3 cup vegetable broth 1/2 tsp basil 1 can of Italian Style Diced Tomatoes 1 can of tomato paste Salt and pepper to taste Nutmeg 4 zucchinis



Directions: Sauté onion and garlic in some oil for about 2-3 minutes on medium heat. Add carrots and celery and sauté until tender. Season with paprika, garlic herb, basil, and a sprinkle with nutmeg (careful, try very little at first and add more if desired). Next add tomatoes, paste, and vegetable broth. After about 2-3 minutes, add lentils. Combine and simmer with lid for about 7-10 minutes on low heat. Stirring occasionally. Season with salt and pepper.

Makes about 4 servings.
